Our IACP conference committees created an event unlike any other in IACP history for our 32nd Annual Conference. As always, you enjoyed each other's company, expanded your knowledge and got an insider's view into the host city. But this year you also experienced firsthand several exciting changes, including new Night Owl sessions, expanded Experts Are In sessions, a new format for the Culinary Expo and Book Fair and unique event venues that let you experience the city of Portland.
From the opening reception and general session to the evening dining options, Portland offered many intimate settings in which to see old friends and connect with new colleagues, while exploring what is on the new culinary horizon.
Our 2010 conference host city, Portland, lies in the heart of Cascadia, an expanse of verdant forested coast, fertile river valleys, and high desert encompassing Oregon, Washington and British Columbia. During our visit we learned that local cuisine is shaped by abundant land and rich habitats, where maritime and agricultural traditions converge with a strong entrepreneurial and individualistic spirit. Cuisine is respectful of past traditions, but creativity is by no means restricted by them.
From its street-side food carts and secret supper clubs to its expansive outdoor markets and world class dining rooms, Cascadia is indisputably one of world's great food regions, representing a burgeoning global gastronomical movement built upon experiences so redolent of place that they could not possibly be replicated. The city of Portland exemplifies the explosive growth of talented culinary entrepreneurs who are dedicating themselves to the ancient traditions of artisanal food and beverage. Attendees felt right at home during their visit to Portland, alongside fellow IACP members and among the markets, craft breweries, distilleries, bakeries and restaurants that have put the city on the culinary map.
